More About Us

We are a Wisconsin-based food concession stand/booth company in which we travel Wisconsin to promote and increase the awareness of Wisconsin Cheeses, Meats & Treats by selling Wisconsin goodness.

We travel around Wisconsin with our Wisconsin delicacies. You can catch us at outdoor events mostly in late spring, summer, and early fall. These outdoor events mostly consist of community events, fairs, and festivals. (Click here for our calendar of events.) You might also see us throughout the cold fall days and freezing winter days at indoor events, such as company-catered events. Remember, if it doesn't say "Wisconsin Fried Cheese Curds™", you're just eating someone else's curds.

Company History

Wisconsin Fried Cheese Curds™ didn't officially start until Spring of 2008. The concept started on a visit to an uncle in Albuquerque, NM, in 2005, over Christmas. The uncle owns a hot air balloon and takes part in a large hot air balloon event call the Albuquerque International Balloon Fiesta. On that visit with him, he gave a tour of Albuquerque, and one of the stops was the field from which Balloon Fiesta takes place. (Balloon Fiesta only takes place in October, and since it was December, it would be another 10 months until the event.) On one of the long parallel sides of the field is where all of the vendors are located. This vendor area sparked an idea that New Mexicans and the rest of the world would enjoy Wisconsin Fried Cheese Curds™.

The following October of 2006, Wisconsin Fried Cheese Curds™ premiered at the Albuquerque International Balloon Fiesta. A lot of people didn't know what cheese curds were, but they gave them a try anyway. (For some unexplainable reason, a lot of visitors from the Upper-Midwest were attracted to the booth...)

Fast-forward to 2008: Having done no other shows other than the 2006 and 2007 Albuquerque International Balloon Fiesta, the owner, who had a full-time retail position as an assistant manager, was called up and told not to come to work anymore as he was effectively being "let go". The large corporation, based out-of-state, cited some sort of policy violation, but realistically, that's when the economy was tanking.

With twin babies, a new mortgage, and no jobs, Wisconsin Fried Cheese Curds™ decided that it was time to go full-time into the festival business.

After that experience of being fired, the promise was made to keep people in Wisconsin employed, so a strict effort was also made to keep the menu with items grown, produced, and/or made in Wisconsin.

With your continued support, Wisconsin Fried Cheese Curds™ has been going strong ever since.

Our Booth

Our Location

We are physically located in West Allis, WI 53227, but do not have a permanent restaurant. Take a look at our Calendar of Events page to see where we will be next.

Our Booth Needs

We operate from a tent that is 10 feet wide (frontage) by 10 feet deep. We are adaptable--if you are providing the tent/floor space, we can squeeze into a spot 10' x 10', although we still prefer just a little bit more breathing room, at least 2' between booth spaces. We use our own electrical box that requires a 50-amp connection—either direct-connect (hardwired) or plug-in, and we use minimal water: wash, rinse, sanitize.

Size

Electricity

We utilize all electricity within our booth with our own electrical box. This electrical box does use a 50-amp connection (RV-type plug or new style appliance plug) and is single-phase. We prefer to be plugged in with a 50-amp connection, but if it is not available, we can plug in with two 30-amp plugs. If neither the 50-amp or 30-amp plugs are available, we can be directly hard-wired into an electric source with a 50-amp fuse by use of pig-tails. (If none of these options are available, we can resort to a lot of extension cords as long as there are electrical connections within 10 feet of our space; this method is not preferred! We need at least six dedicated circuits to prevent popped circuits.) If NO electricity is available at all, we can resort to using our generator. Water

We don't need a direct connection, just access to good clean water.

Where and when possible, we try to reduce and to recycle as much as we can. This includes:

  • Offering our Lemonade Freeze in PET cups that can be recycled along with other plastic material

  • Offering for sale soda in PET plastic bottles or aluminum cans that can be recycled

  • Not using styrofoam cups for our hot beverages

  • Using paper cups for our hot beverages

  • Making canisters available for the collection of aluminum cans

  • Collecting and emptying our used oil for biodiesel

  • The use of LED lighting within our booth

  • Collecting cardboard for recycling

  • The use of biodegradable cleaning solutions
